From Feed to Table: Comprehensive Fatty Acid Testing in Poultry

Under the esteemed expertise of Dr. Bruce Holub, Lipid Labs has established a robust reputation in omega-3 DHA/EPA testing. Our work, however, extends beyond fish oil, demonstrating our commitment to rigorous analysis and quality assurance across a diverse range of food products.

 

A project that was of great interest to us was the detailed analysis of fatty acid content in poultry products—encompassing the feed, the chickens, and the eggs they produce. The testing is similar to the in-process sampling we discussed in a previous resource, where we addressed quality control in fish oil supplements undergoing regulatory certification.

 

What does a fatty acid profile provide, and how does it apply to poultry? 

 

A fatty acid profile provides a detailed breakdown of the types and quantities of fatty acids in a product. This includes essential fatty acids like omega-3 and omega-6, saturated, monounsaturated, and polyunsaturated fats. Understanding these profiles is crucial for producers who want to ensure their products meet specific nutritional standards or health claims.

 

The poultry project focused on quantifying Docosahexaenoic acid (DHA) levels in the chicken feed and the resulting meat products. Several dosages of DHA in the chicken feed were monitored, and based on the results, we were able to help develop a formula with controlled dosing to produce chicken meat containing the desired amount of DHA.

 

In addition to a fatty acid profile, are there other key tests for producers to consider? 

 

While fatty acid profiling is a critical aspect of our work, it’s only part of our broader suite of tests. Projects can involve testing a wide range of matrices, including oils, feeds, tissues, organs, eggs, and blood, to help produce healthier, high-quality food products.

 

For producers looking to ensure the highest quality in their natural food products, other tests are equally important. Here are some additional testing services, along with examples of applicable matrices:

 

  • Lipid Class Profiling: This analysis provides insights into the distribution of different lipid classes, such as triglycerides, phospholipids, and cholesterol.
    • Applicable Matrices: Dairy products (butter, cheese), oils (olive oil, fish oil), meat products, and plant-based foods.

 

  • Oxidation Stability Testing: This test measures the resistance of fats and oils to oxidation, which is crucial for ensuring product shelf life and safety.
    • Applicable Matrices: Edible oils (sunflower oil, soybean oil), nuts and seeds, processed foods (snacks, baked goods), and animal fats (lard, tallow).

 

  • Trans Fatty Acid Analysis: Trans fats are undesirable in food products due to their adverse health effects. Our testing services can accurately quantify trans fatty acids to help producers eliminate or reduce these harmful components in their products.
    • Applicable Matrices: Processed foods (margarine, baked goods), fried foods, dairy products, and meats.

 

  • Fat-Soluble Vitamin Analysis: Vitamins A, D, E, and K are fat-soluble and are often included in lipid-rich foods. Testing for these vitamins ensures products meet nutritional claims and provide the intended health benefits.
    • Applicable Matrices: Dairy products (milk, cheese), fortified foods (cereals, juices), dietary supplements, and oils (fish oil, palm oil).

 

  • Sterol Analysis: This test focuses on plant sterols and cholesterol essential for heart health. Analyzing these components can help producers develop products with specific health benefits, such as cholesterol-lowering foods.
    • Applicable Matrices: Plant-based foods (soybeans, nuts), dairy products, meat products, and oils (vegetable oils, fortified margarines).
